Mealtime Mondays

Monday
B- Apple Cinnamon Baked Oatmeal
L-Grilled Cheese and Turkey
D- Sausage and Whole Wheat Biscuits, Eggs

Tuesday
B- Sweet Potato Whole Wheat Pancakes with Bananas
L- Tuna Melts with Carrots, Cauliflower and Dip
D- **changing this day because Roast sounded horrible to my pregnant self :) **
Italian Chicken with Green Beans

Wednesday
B- Leftover Apple Cinnamon Baked Oatmeal
L- Shredded Beef Burritos with Chips and Salsa
D- Broccoli, Potato, and Cheese Soup with C-Life

Thursday
B- Eggs, toast, and clementines
L- Leftover Soup
D- Broiled Fish with Broccoli Hotdish (no meat)

Friday
B- Breakfast Cookies and Smoothies
L- Lentil Soup and Whole Wheat Bread
D- Cheddar Ranch Burgers, Sweet Potato Fries

Saturday
Brunch- Egg Bake, fruit salad
D- Popcorn Chicken, Green Beans with Mushrooms

Sunday
B- at Church
L- Leftovers
D- Salmon Patties, Salad, and Apple Crisp

Recipe of the Week
Italian Chicken- Crock Pot

Ingredients
3 chicken breasts, cubed
1 packet of dry italian dressing spices
1 cup white wine (or cooking wine), can be sub. for chicken broth
1 brick cream cheese (8oz)
1 can cream of mushroom soup
1/2 cup mushrooms (because we like mushrooms around here- can omit if you're not a mush fan)

Directions
1. brown chicken on all sides- doesn't have to be cooked through, just enough to brown the sides
2. place all ingredients in crock pot
3. once warm, stir all ingredients together, mixing the cream cheese and soup well.
4. cook 4 hours on low or until chicken is cooked through
